Pesto sauce – simple recipe
Pesto sauce, simple recipe – a green sauce from Genoa (Liguria) in Italy, whose main ingredient is basil.
Traditionally made in marble mortars made of olive oil, basil, Parmesan cheese or other finely grated hard cheese, pine nuts and salt.
It is surprising how simple pesto sauce can be so delicious! Everybody, literally, like to eat pasta with pesto at home. Especially when you prepare pesto yourself. My green pesto has a completely different, much fresher and clearer taste than those that can be purchased in stores and supermarkets.
It happens that even half an hour before leaving home I do not know what to eat or take with me to work. Then I usually remember the spare jar of pesto that I keep in my fridge and within 15 minutes I prepare a tasty and filling food which I pack in the box and go out.
It’s worth experimenting with a other herbs like parsley, even coriander so each time the sauce taste a little different.

Ingredients
- 3 handfuls of fresh basil
- one handfuls of ground almonds, pine nuts or cashews
- about 50-70 ml virgin olive oil
- 20-30 g pecorino or parmesan or cheese
- 1 garlic cloves
- 1 teaspoon of lemon juice
- salt and black pepper to taste
How to make it
- Heat a frying pan, put pine nuts on it and roast them for a few minutes.
- Transfer the peanuts to a blander, add olive oil, basil, parmesan, garlic, lemon juice and a little salt and pepper.
- Blend everything into a smooth sauce, season to taste. If the sauce is too thick – add more oil, if too thin – add basil or Parmesan cheese.

Cook the pasta al dente. Mix this pesto sauce and serve immediately.
