They come out soft and incredibly tasty. It is very important not to over-mix the ingredients for too long, because it is enough for the dough to have a creamy consistency. I recommend frying them in a pancake pan or with a non-stick surface.

This recipe for banana pancakes for breakfast is perfect for adults and children.


  • 250 g plain flour (2 cups)
  • 50 g caster sugar (1/4 cup)
  • 2 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • Pinch of salt
  • 450 ml buttermilk (1 cup + 3/4 cup)
  • 50 ml vegetable oil (not olive oil) (1/4 cup)
  • 2 large eggs
  • 2 bananas or 2 tablespoons of any jam

How to make it

  1. In a large bowl sift all your dry ingredients (flour, sugar, baking powder, soda and pinch of salt).
  2. In measuring cup mix all your wet ingredients (buttermilk, oil, eggs and mashed bananas), then gently whisk all together.
  3. Add wet ingredients to dry mixture and whisk it. It doesn’t need to be perfect, just to incorporate all the ingredients.
  4. Preheat a non-stick pan over medium-high heat and grease with little butter.
  5. Apply 2 tablespoons of dough (1 pancake) and fry for approximately 3-4 minutes until bubbles begin to appear and the pancakes looks matte at the edges. Use a spatula to flip over and repeat frying for another 2-3 minutes.


It is very important to fry them slowly, because then they grow nicely in the pan, they are not burned from the outside, and raw inside.
