Pasta with sweet potato sauce


Pasta with sweet potato sauce, creamy and delicious. This simple pasta dish is perfect for lunch and dinner.

I find this recipe perfect for those who do not like to spend too much time in the kitchen and yet want to surprise their loved ones with something extraordinary, simple and incredibly tasty.

Sweet potatoes are rich in complex carbohydrates and fiber. They are a source of vitamins A, C and B vitamins and have a low glycemic index.

Well-prepared pasta also plays an important role in this dish, so make sure you cook it al dente. Mix it immediately with the sauce so that it does not stick together and the pasta absorbs as much of the sauce as possible.

This sauce perfectly covers the pasta, it is thick and full of flavour. If you have never tried to make a creamy sauce from sweet potatoes, it’s definitely time to give it a try. I am sure you will love this recipe.


  • 1 large sweet potato (cut into small pieces)
  • one large fresh tomato
  • 1/2 tablespoon olive oil
  • 1 finely chopped onion
  • a bunch of coriander (leave some for garnish)
  • 1 clove garlic (chopped)
  • salt and pepper for taste
  • 1 tin coconut milk (around 240ml)
  • 2 teaspoon lime juice
  • 1/2 teaspoon ground sweet paprika and turmeric
  • 1 tablespoon almond butter
  • 1/2 chilli (optional)

How to make it

  1. Firstly bake the sweet potato in the oven at 180 C for around 30-40 minutes. Once soft, peel it and scoop out.
  2. Cook pasta according to package instruction in a salty water or you can use fresh home made pasta.
  3. While the pasta is cooking, heat up olive oil in a non stick pan. Add the onion and cook for about 2-3 minutes then add garlic and chilli (optional) and cook for another minute (don’t wash the pan yet, we will need it again)
  4. Remove them from the pan and add it in to a blender along with the rest of ingredients.
  5. Blend it all together for a few minutes until creamy, you can add some water if it’s too thick for you.
  6. Pour the sauce back to the pan and heat it up until bubbly and leave it for 2-3 minutes.
  7. When the pasta is done, drain, mix with the sauce and heat up for 1 minute until all the sauce stick to the pasta.
  8. Add some fresh chopped coriander on top and serve your creamy sweet potato pasta while is still hot.
