Light, fluffy green tea cupcakes, topped with light and fluffy whipped cream and brittle.

Matcha green tea cupcakes are a great way to try something different.The famous Japanese Matcha adds a delicate flavour to the cupcake, and above all, it colours it with an unusual green colour.

Matcha green tea is considered one of the healthiest – it adds energy, increases concentration and improves the body’s metabolism. It is also extremely rich in fibre and antioxidants, it has also brilliant affects on the skin. Matcha tea can also be used for various culinary dishes. Let’s use it to prepare a fluffy green tea cupcakes with whipped cream, finished with delicious and crunchy brittle.

  • 125g self-raising flour (1 cup)
  • 1 teaspoon matcha green tea powder
  • 1/2 teaspoon bicarbonate of soda
  • 125 g caster sugar (2/3 cup)
  • 125 g unsalted butter (1/2 cup)
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 2 tablespoon whole milk

How to make it

  1. Preheat the oven to 170 degrees Celsius (338°F).
  2. Sift the dry ingredients (flour, sugar, soda and matcha powder) into a bowl and add butter and eggs, beat for 1 minute.
  3. Stir vanilla extract into the milk, then add to the mix and whisk for another 30 seconds.
  4. Scrape down the sides with a spatula and mix for another 30 seconds.
  5. Fill the paper cases two-third full with mixture.
  6. Bake for about 20 minutes, leave it to cool down on the wire cooling rack.

For matcha green tea cream I use:

  • 150 ml double cream, chilled (2/3 cup)
  • 200 g mascarpone cheese, chilled (1 cup)
  • 1 tablespoon powdered sugar
  • 2 teaspoons of matcha tea (or more, for colour), sifted

Place double cream and mascarpone cream in a mixing bowl (together) and beat into a stiff cream, adding powdered sugar at the very end, be careful not to whisk for too long otherwise you will have delicious butter :).


  • 220g caster sugar (1 cup)
  • 4 tablespoon water
  • 2 tablespoon sesame seeds or 40g (1/4 cup) roasted peanuts
  • 15g chopped butter (1tbsp)
