Quick and easy brittle recipe
Quick and easy brittle recipe is perfect for my matcha green tea cupcakes, but you can experiment with different combinations of nuts and seeds.
You can serve it with tea or coffee, for dessert, or simply save it any leftovers for snacking. This quick and easy brittle recipe is perfect as a gift, simply pack into paper bag and give it to your friends or family so they can enjoy it as well.
Ingredients
- 220g caster sugar (1cup)
- 4 tablespoon water
- 2 tablespoon sesame seeds or 40g (1/4 cup) roasted peanuts
- 15g chopped butter (1tbsp)
How to make it
- Before you start, lightly oil the spatula and a baking tray. Chop the peanuts if you using and put it on a side.
- On low heat warm the sugar and water for few minutes or until sugar dissolves, stir occasionally.
- Next turn the heat to medium and allow the mixture to bubble.
- Boil until it turns a light amber colour, do not stir in these phase.
- As soon as is ready, remove from the heat and quickly add butter until you get velvety smooth texture.
- Add sesame seeds or chopped peanuts and very carefully pour the mixture on the oiled baking tray.
- Leave to cool completely and harden, then break brittle into pieces.
Use your brittle straight away, decorate you green tea cupcakes or store in a dry airtight container for around 2 weeks (if you are lucky not to eat it before).
