A simple homemade strawberry jam recipe. Perfect as an addition to sandwiches, pancakes or cupcakes.

Fresh strawberries are a great source of vitamin C. Unfortunately when we prepare jam with strawberries, this valuable vitamin will oxidise, but its minimum amounts will certainly remain. Additionally, the homemade jam will be rich in magnesium, iron and manganese. The fruit also contains bromelain, anthocyanins and phytocides.

I used very ripe and sweet strawberries. For strawberry jam, I recommend buying strawberries when they are the cheapest. Usually it is the very peak of the season or its end.

Do not buy strawberries after heavy rainfall as they will be heavy in water and not sweet. Strawberries from the end of the season are very good for preserves. They are the cheapest, but also quite small, so you will spend more time removing the stalks.

Strawberries for jam


  • 400 grams fresh or frozen strawberries (2 cups)
  • 110 grams caster sugar (½ cup + 1 tbsp)
  • 1 lemon (optional)

How to make it

  1. Using fresh fruit sauces is a great way to add brilliant natural flavour to your cupcakes. They can be drizzle over the top , folded into icings or sponges, or even piped into the middle of cupcakes for a hidden jammy treat.
  2. Place your strawberries and the sugar in a pan over a medium heat and bring to a gentle simmer. Reduce the heat and allow the mixture to bubble gently for 10 to 15 minutes, or until thickened, stirring occasionally.
  3. Once thick, remove from the heat and strain the fruit jam through a sieve while it’s still warm, using the back of a spoon to push as much of the liquid through as you can. Have a taste and add some more sugar or fresh lemon juice (if needed), until you have got just the right sweetness, then pour into an airtight container or jar and leave to cool.
  4. Use straight away, store in the fridge for up to 2 weeks, or freeze and use it whenever you fancy.
