Quick cake for coffee

Today we will make this delicious and quick cake for coffee. Very easy to prepare. It is tasty, fluffy, moist and smells good. It looks delicious. Perfect for coffee, I recommend it!

Ingredients

  • 4 large eggs
  • 190g of caster sugar (¾ cup + 3 tbsp)
  • 2 teaspoons of vanilla extract
  • 130ml of oil (½ cup + 2 tbsp)
  • 130g rose petal jam (you can use any jam) (¼ cup + 3 tbsp)
  • 130ml of milk (½ cup)
  • 330g of self-raising flour (2 cups + 1 tbsp)
  • 1 and 1/2 teaspoons of baking powder
  • 1/3 teaspoon of baking soda

Ganache

  • 150g of dark chocolate (¾ cup + 1 tbsp)
  • chocolate sprinkles (you can use any of your choice)

How to make it

  1. Put the whole eggs into a bowl, add sugar, vanilla extract and beat with a mixer for about 6 minutes to a light, creamy consistency.
  2. Add oil to the egg mixture and mix briefly with a spatula. Add jam and mix slowly with a spatula.
  3. Next add cocoa, baking powder, baking soda to the flour and mix with a spoon.
  4. Sift half of the prepared flour into the egg mixture, pour in half of the milk and stir a few times with a spatula, so that the ingredients combine a little. Then sift the remaining flour, add the remaining milk and mix thoroughly with a spatula.
  5. Pour the finished dough into a baking tin lined with baking paper.
  6. Put the mixture into the preheated oven. Bake at 170°C (338°F) on top and bottom function for about 55-60 minutes. I was baking on the lowest level of the oven.
  7. After removing from the oven, set aside to cool completely.
  8. Carefully remove the cooled cake from the tray and remove the baking paper.

Ganache

  1. Break the chocolate and put it into a bowl, melt it steamed or in a microwave oven. If you melt the chocolate in the microwave, remember to do it in stages, put it in for about 20-30 seconds, remove and stir. We do this until the chocolate is completely melted, be careful not to overheat it.
  2. Decorate the top of the cake with melted chocolate. Finally, sprinkle with chocolate sugar sprinkles and serve.
