Prawn and harissa spaghetti for dinner. It only takes 15 – 20 minutes to make it. Great for a family meal or a special occasion. Very simple to make and really delicious. This recipe is an inspiration from BBC good food, I added some coconut milk so it is not so spicy and got creamy consistency so that all family members can enjoy it. In this recipe you can use any kind of pasta, just make sure it is cook al dente, the sauce will soften the past anyway.

Ingredients (serves 3-4)

  • 200 grams tender stem broccoli, cut into thirds
  • 300 grams dried spaghetti
  • 4 tbsp olive oil
  • 2 large garlic clove
  • 300 grams cherry tomatoes, halved
  • 250 grams raw king prawns (you can add more if you like it)
  • 2 tablespoons rose harissa paste
  • 250 ml coconut milk (1 cups + 1 tbsp)
  • 1 lemon, finely zested

How to make it

  1. Bring a pan of salted water to the boil. Add the broccoli and boil for 2 minutes. Drain and set aside.
  2. Cook the pasta by following pack instructions (al dente around 8-10 minutes).
  3. In the meantime heat the oil in a large frying pan, add the garlic clove and fry over a low heat for 2 minutes. Remove the garlic leaving the flavoured oil or if you like to eat it, leave it on the pan.
  4. Next add the tomatoes to the pan and fry over a medium heat for 5 minutes, or until beginning to soften and turn juicy.
  5. After add harissa and lemon zest and fry for 1 minute, then add coconut milk and boil for around 5 minutes until thickens. Stir through the prawns and cook for 2 mins, or until turning pink.
  6. Toss the cooked spaghetti through the prawns and harissa sauce, season to taste and serve immediately.
