Crispy, crunchy, delicate shortbread butter cookies. They are very simple and quick to prepare. You can cut out any shape and freely decorate them. Perfect for tea or coffee.

TIPS

Roll out the dough that you previously wrapped in cling film to a flat cake. Just divide them into 2 pieces to make it faster and easier to cut out butter cookies. The dough may be sticky, but it does not matter, the dough will harden after being cooled in a refrigerator. Cookies will melt in your mouth so make sure you don’t add too much flour.

This recipe can be used as a base for fruit tarts. To do this, roll out the dough into one piece according to point 4, put it in a tart dish and prick it with a fork. Bake in a preheated oven at 180°C (356°F) for about 15-20 minutes. Allow the base to cool completely before placing your favourite fruit on top.

Recipe for shortbread butter cookies

 

Ingredients

  • 100 grams of caster sugar (½ cup)
  • 200 grams of butter, cut into pieces (¾ cup + 2 tbsp)
  • 300 grams of plain flour (1 cups + ¾ cup + 2 tbsp)
  • 1 egg
  • ½ teaspoon salt
  • 1 teaspoon of vanilla extract

How to make it 

  1. Put all the ingredients into the mixer and beat in a mixer for around 1 minute until smooth paste.
  2. Shape the dough into ball, wrap it in cling film and place in the refrigerator for at least 30 minutes.  
  3. After about 15 minutes, preheat the oven to 180°C (356°F). 
  4. Divide the dough into two equal parts, roll out each piece between two sheets of baking paper to a thickness of about 5mm.
  5. Using cookie cutters, cut out the various forms and place them onto a baking tray covered with baking paper.
  6. Bake in a preheated oven at 180°C (356°F) for 10-12 minutes until golden brown.
  7. Leave to cool completely.

     

You can decorate this shortbread butter cookies with melted chocolate or leave it plain, store it in a airtight container but it probably won’t stay there for long time 🙂
