Fluffy cinnamon buns
Fluffy cinnamon buns with or without frosting. These are very simple buns that, in principle, can be made from yeast dough. Today’s proposal is a soft and delicately buttery, cinnamon buns.
Cinnamon buns are delicious, easy to prepare, they are very popular and they disappear very quickly.
Maybe someone else will be tempted?
Ingredients
BUNS:
- 200 ml of hot milk (¾ cup + 1 tbsp)
- 50 grams of butter (3 tbsp + 2 tsp)
- 3 tablespoons of caster sugar
- 20 grams of fresh yeast or 7 grams dry yeast (1 sachet)
- 300 grams of self-raisin flour (1 cups + ¾ cup + 2 tbsp)
- 1/4 teaspoon of salt
- 1 egg
FILLING:
- 4-5 tablespoons of sugar
- 1-3 teaspoons of cinnamon (depend if you like cinnamon)
- 2-3 tablespoons of butter

How to make it
- First of all add butter to the hot milk – stir it until it melts, wait till milk is cooler (more or less at body temperature). It happens quite quickly because the butter, while melting, also cools the milk.
- Next pour sugar into lukewarm milk and crumble the fresh yeast or add sachet of dry yeast. Then mix thoroughly and set aside. In meantime measure out the remaining ingredients.
- Add flour and salt to a bowl, then add an egg and milk with sugar, butter and yeast.
- After that, knead it into a soft, smooth, elastic dough – you can use a spoon to combine the ingredients or with a mixer for yeast dough. I usually use a mixer, it’s easier.
- The dough is supposed to be soft, so if you feel that it is too “hard” add more milk, if it is too “wet” sprinkle some flour.
- Put the kneaded dough into a bowl, cover it and leave it to rise, until it doubles in volume around 30-60 minutes depending how is the weather outside :).
- In the meantime line the baking paper over the baking tray.
- Now prepare a cinnamon filling. Add sugar and cinnamon to the bowl and mix thoroughly, melt the butter and cool it down.
- Next roll the dough to a thickness of half cm, giving the dough a rectangular shape. Spread it with butter, sprinkle generously with cinnamon and sugar filling and roll the dough.
- When the dough is ready slice it into as many pieces as you want the buns – it should be enough for 9 bigger to 12 smaller buns.
- Now put each one in a prepared baking tray, keep the space between them, because they will rise.
- Finally put the baking tray in a cold oven, heat up to 180°C (356°F) – start counting the baking time from the moment the oven reaches this temperature and then bake the rolls for 20-25 minutes. At the end you can cover it with a foil so that it does not burn too much – I usually cover it for the last 5 minutes.
- Once baked, I take it out from the oven, leave on the metal grid with the baking paper and leave it to cool down.
And it’s ready 🙂 You can serve them with or without icing.
How to make yogurt frosting
- 200 grams icing sugar (1 cups + ¼ cup + 2 tbsp)
- 1 tablespoons of plain yogurt
- Put sugar in a bowl, add yoghurt, but gradually. The amount of yogurt depends on its consistency (thick / liquid). I mix thoroughly and possibly add more yogurt to get the desired consistency.
- Fluffy cinnamon buns are ready to eat.
