This cake with raspberry jelly and raspberry mousse has been on my list to make for so long. My neighbor brought me a very similar cake from a pastry shop and I liked it a lot. So I decided to try to make it myself and it turned out to be quite simple. Double cream adds lightness and sweetness to the raspberries. I could just eat this raspberry mousse with a spoon.

Ingredients

  • 450grams of raspberries (fresh or frozen) (1 ¾ cup)
  • 6 tablespoons of caster sugar
  • 6 teaspoons of powdered gelatin
  • 500ml double cream (1 cups + ¾ cup + 3 tbsp)
  • 160 grams of shortbread chocolate cookies or Oreo cookies (¾ cup)
  • 30 grams butter (2 tbsp)

Base

  1. Add the cookies into food processor and mix. Add melted butter and mix thoroughly.
  2. Transfer to the lined tin (8 inch), flattening throughout and put it to the refrigerator. 

Prepare the raspberry mousse

  1. Soak the gelatin in 6 tablespoons of cold water. Mix to get no lumbs.
  2. Put the raspberries in the pot and cover them with sugar. Boil it while stirring to dissolve the sugar.
  3. Remove the pot from the oven and blend until smooth, then rub through a sieve.
  4. Boil the resulting raspberry mousse again, remove the pot from the oven and add the gelatin, stirring with a whisk until it dissolves.
  5. Leave the mixture to cool down.
  6. Put a cool one in the fridge, and when it starts to harden, beat the cream until stiff and stir into the raspberry mousse.

Put the cooled raspberry mousse on the base, even the surface and put in the fridge for about 2 hours. In the meantime let’s prepare the jelly.

How to make it

  1. Prepare the jelly according to the instructions on the package, and let it cool down.
  2. Pour over a stiff layer of raspberry mousse and refrigerate for around 2 hours.
  3. Place the raspberries around the cake.
  4. Keep the dessert uncovered in the fridge.
