Vanilla baked cheesecake

  • 1 kg of white full fat cheese
  • 10 eggs
  • 250 grams of butter
  • 300 grams of caster sugar
  • 3 tablespoons of plain flour
  • 1 teaspoon vanilla paste

How to make it

  1. First of all make sure all the ingredients for the vanilla baked cheesecake are at room temperature.
  2. Separate the yolks from the whites.
  3. Mix the soft butter for approx. 5 minutes until it becomes fluffy. Keep beating, gradually add the yolks mixed with sugar, one tablespoon at a time.
  4. Then mix with cheese, flour and vanilla paste.
  5. Beat the egg whites until stiff and add to the cheese mixture, mix thoroughly, but not too rapidly.
  6. Preheat the oven to 180 degrees C (top and bottom).
  7. Grease 26 cm round tin with butter.
  8. Put the cheese mixture to the greased tin and put it to the oven (on the lower shelf than the middle).
  9. Put a small pan or heatproof bowl on the bottom and pour boiling water into it (halfway).
  10. Bake for 1 hour and 5 minutes.
  11. The cheesecake will rise a lot and turn brown, it may crack in places, but it will return to the original level.
  12. After baking, leave the cheesecake for a few minutes in a closed oven, then cool it gradually, opening the door a bit, and finally remove the cheesecake from the oven.
  13. When it is completely cool, remove from the tin and sprinkle the cheesecake with icing sugar.
