Wash the whole beets under running water and place them in a large pot. Pour enough water into the pot to cover the beets. Cover the pot with a lid and cook the beets until tender. How long they will cook depends on their size. After 40 minutes you can check if they are soft (stick a fork). It may take around 1 hour. After cooking, drain all the water.
Peel the slightly cooled beets. Cutt off both ends. Grate the beetroots. I recommend wearing gloves when working with beets.
Put sugar, salt and white wine vinegar in the beetroots. Mix everything thoroughly.
After mixing the beetroots, check their taste and decide if you want to add more salt, vinegar or sugar. Half of the vinegar can be replaced with lemon juice. You can also add a little ground pepper.
